White Peak Distillery

White Peak deliberately uses fresh live brewer's yeast and very long fermentation to maximise fruit and aromatic complexity before distillation. Light peat adds a restrained smoky layer, while copper pot distillation preserves enough body for active wood influence. STR wine casks, bourbon wood and other oak types then work with rather than replace the fermentation-driven fruit structure.

White Peak is a modern English distillery with a distinctly brewing-led approach to whisky. Fresh Thornbridge brewer's yeast and unusually long fermentation are used to build fruit before the lightly peated wash reaches the copper stills, making fermentation one of the real signatures of Wire Works. The cask programme is broad, but the distillery's own releases repeatedly show that the spirit—not just the wood—is intended to remain visible.
