Slow copper-pot distillation maximises copper contact while preserving enough body for active wood influence. The resulting spirit is engineered specifically for a sherry-led, wood-forward maturation regime rather than for neutral cask treatment.

The Lakes Distillery designs its spirit with maturation already in mind. Three yeast strains and fermentation of up to 96 hours build fruit and texture before slow copper distillation creates a spirit strong enough to stand up to assertive sherry-led wood. It is a useful example of modern English whisky making where fermentation, distillation and cask design are treated as one connected flavour system.
Production
The distillery uses pure water from the Lake District National Park in whisky production.
Unpeated malted barley is used for The Lakes single malt.
Three different yeast strains are combined to build layered flavour. Fermentation is extended to as much as 96 hours, deliberately reaching malolactic fermentation to increase complexity and creamy texture.
The distillery uses copper pot distillation with separate wash and spirit stills. Distillation is run slowly to maximise copper contact and retain a robust, fruity spirit suited to active maturation.
The house philosophy is explicitly sherry-led and wood-forward. The distillery has expanded racked warehousing on site to support maturation and stock growth.
