What makes the spirit taste as it does

Starward deliberately treats fermentation as a flavour-building stage, using both brewer's and distiller's yeast to generate tropical-fruit esters. Copper distillation is then managed to preserve rather than erase those fruit-driven congeners. Fresh Australian red-wine casks add berry fruit, spice and tannin, making the maturation programme a direct extension of the fruity new-make design.

Why we pour it

Starward's identity is unmistakably Australian: local malt, brewer-led fermentation thinking and fresh Australian wine barrels rather than a Scotch-style cask template. The spirit is designed to carry tropical fruit from fermentation through copper distillation, then meet Shiraz, Cabernet, Pinot and other red-wine casks in Melbourne's variable climate. The result is a whisky style where fermentation fruit and wine-cask character are deliberately built to work together.

How it is made

Malt

Starward uses Australian malted barley, including barley grown around Geelong for its single malt production.

Fermentation

A combination of brewer's and distiller's yeast is used to develop tropical, fruit-forward ester character. Official educational material states whisky fermentation takes at least 48 hours.

Stills & distillation

Whisky is distilled in copper stills, with the distillery emphasising retention of fermentation-derived tropical fruit character in the new make.

Maturation

Starward is built around Australian red-wine-barrel maturation, including Shiraz, Cabernet Sauvignon, Pinot Noir and Merlot casks sourced from wine regions such as the Yarra Valley, Barossa Valley and Margaret River.
