Scapegrace builds its single malt around New Zealand barley, glacial water and a modern Central Otago maturation climate with large seasonal temperature movement. Copper pot distillation provides the spirit base, while unsmoked and Manuka-smoked malt streams allow the distillery to create distinct aromatic styles without relying on Scotch-style peat conventions. French oak and local wine-cask influence then add spice, structure and regional character to the fruit-led new make.

Why we pour it

Scapegrace is a distinctly New Zealand whisky operation rather than a copy of a Scottish template. Local barley and Southern Alps water form the base, while the distillery also uses Manuka-smoked malt to create a uniquely local smoky style. Central Otago's dramatic seasons and a cask programme that includes French oak and New Zealand wine wood make maturation as important to the identity as the spirit itself.

Water

The distillery identifies Southern Alps glacial water as its whisky water source.

Malt

100% New Zealand barley is used for whisky. Official material identifies local distiller's malt and a separate Manuka-smoked malt made with New Zealand-grown West Coast Manuka wood.

Stills & distillation

Scapegrace states that the Central Otago site uses Speyside-made copper stills; established specialist reporting describes a pair of copper pot stills for whisky production.

Peat

The distillery makes both unsmoked malt whisky and Manuka-smoked malt whisky; no peat-PPM figure is published in the verified source set.

Maturation
