A 60-72 hour fermentation and relatively narrow spirit cut create a sweet, grassy, medium-bodied new make, while the absence of climate control subjects casks to intense regional temperature and humidity differences. The resulting house character is cask-active and concentrated, with maturation location functioning as a major production variable.

M&H is built around the idea that climate itself can become part of whisky production. The spirit is made with familiar malt-whisky tools—malted barley, 60-72 hour fermentation and copper pot stills—but its casks mature across dramatically different Israeli environments, from Tel Aviv to the Dead Sea. For the customer, that makes M&H a particularly clear demonstration of how heat and humidity can reshape extraction, evaporation and maturation speed.
Production
Local groundwater is filtered and purified through the distillery's water-treatment system before use in production.
M&H uses unpeated malted barley for standard production and runs a two-week peated production session at approximately 40 ppm every six months.
Six washbacks are used with specialty dry whisky yeast. The official distillery states a fermentation duration of 60-72 hours.
M&H uses double distillation in custom-made traditional copper pot stills. The spirit cut is relatively short, beginning around 80% ABV and ending around 70%, producing new make at approximately 75% ABV.
Standard production is unpeated; a dedicated peated run at approximately 40 ppm is carried out periodically.
Whisky is matured for at least three years without climate control across several Israeli climate zones. The cask programme includes new oak, ex-bourbon and rye, STR wine casks, kosher sherry butts, rum, Cognac, Islay whisky and Israeli wine casks.
