What makes the spirit taste as it does

Macduff's short fermentation gives the wash a relatively direct, cereal and nutty base rather than an intensely ester-driven one. The unusual five-still configuration, kinked rising lyne arms and cold shell-and-tube condensation balance reflux against a weightier, slightly sulphury new-make character. That combination gives the spirit body and nuttiness while preserving enough fruit to keep it from becoming blunt.

Why we pour it

Macduff is technically unusual because its stillhouse uses two wash stills and three spirit stills rather than matching pairs. Rising lyne arms and shell-and-tube condensers pull the spirit in two directions at once: some extra reflux and fruit, but also enough weight to retain a nutty, robust core. It is a useful distillery for understanding how condenser temperature and lyne-arm geometry can matter as much as still shape itself.

Production

How it is made

Water

Established specialist sources record process water from local natural spring and field-drain sources, with burn water used for cooling.

Malt

Malt is sourced commercially; current specialist references describe predominantly unpeated malt for core production.

Fermentation

Current specialist reporting records nine stainless-steel washbacks of approximately 34,000 litres and a fermentation time of about 55 hours.

Stills & distillation

Macduff operates five copper pot stills in an unusual two-wash/three-spirit configuration. The stills have upward-tilting lyne arms with pronounced right-angle kinks; the spirit stills use horizontal shell-and-tube condensers, helping create a weighty, nutty spirit while the rising lyne arms add reflux.

Maturation

Macduff spirit destined for single malt and blends is matured within Bacardi/Dewar's warehousing; specialist sources also document on-site/racked and dunnage storage historically.
