Lagg deliberately uses cloudy wort, M-strain yeast and a moderately long fermentation to retain fatty-acid and ester precursors that contribute earthier, weightier flavours. Its short, broad stills and downward-sloping lyne arms reduce reflux compared with tall-necked designs, reinforcing body and peat weight. The result is a smoky spirit with an oily texture but enough fruit to stop the profile becoming purely tarry or medicinal.

Lagg was engineered from the start to make a fuller, earthier style of peated Arran whisky. Cloudy wort, Douglas-fir washbacks and short, broad pot stills all push the spirit toward weight and texture, while carefully chosen yeast and fermentation preserve a fruitier core. For customers, it is a useful contrast to the lighter unpeated style made at Lochranza on the same island.
Production
Lagg uses 100% malted barley and produces peated spirit at different specifications, including 20 ppm and 50 ppm runs. Official technical material identifies Concerto malt in established production.
Four Douglas-fir washbacks, each 24,000 litres and normally filled to 20,000 litres, are used. Current official process material gives approximately 55-60 hours with M-strain distillers yeast, followed by an additional resting period in a pine receiver before distillation.
Two custom Forsyths copper pot stills are used: a 10,000-litre bulbous-onion wash still and a 7,000-litre lamp-glass spirit still. The stills are short and broad with a downward-sloping lyne arm, and are steam heated.
Lagg is designed around peated whisky production, with official material documenting 20 ppm and 50 ppm malt specifications depending on the production run.
The core Kilmory style is matured in first-fill bourbon barrels; the distillery also uses Oloroso sherry and a range of other finishing casks for specific releases.
