Kilchoman combines highly traditional farm-distillery practices with deliberately long fermentation and very small still geometry. The 90-hour fermentation develops fruity and lactic complexity, while slow distillation through a tall, narrow-necked spirit still with a reflux bulb increases copper interaction. This keeps the heavily peated distillate unusually clean, floral and citrus-led rather than simply dense or medicinal.

Kilchoman is one of the clearest grain-to-glass examples on Islay: barley can be grown, floor-malted, peated, distilled, matured and bottled at the same farm distillery. Its long 90-hour fermentation and small reflux-heavy spirit still are designed to preserve fruit and floral lift inside a firmly peated structure. That is why Kilchoman can taste unmistakably smoky while still showing brightness, citrus and creamy fermentation character.
Production
Water is drawn from the Allt Gleann Osamail burn; spirit is reduced to cask-filling strength with Glen Osamail water.
Kilchoman grows barley on Rockside Farm for its 100% Islay releases and retains traditional floor malting. Its own malt is peated on site over Islay peat; other production also uses peated malted barley.
The distillery states a 90-hour fermentation for current production, using distiller's yeast; six washbacks are documented in official tour material.
Two identical stillhouses operate in parallel. Each has a steam-heated wash still charged with about 3,000 litres and a small spirit still with a tall narrow neck and reflux bulb; the spirit still is approximately 2,070 litres. Slow distillation and high copper contact are used to create a light, floral spirit.
Peat is fundamental to production; on-site malt for the 100% Islay style is smoked with Islay peat and official production material describes peating as a core stage.
100% of Kilchoman spirit is matured on Islay. The site uses both dunnage and racked warehousing; bourbon casks are the predominant maturation vessel with sherry and other cask types also used.
