Double distillation in Forsyths copper pot stills creates a clean, fruit-forward new make, while the hot Yilan warehouses accelerate extraction and oxidation. The resulting house style is typically ripe, tropical and cask-expressive, with climate playing a larger role in maturation speed than in traditional cool-climate Scotch production.

Kavalan is a useful example of how climate can reshape whisky production without changing the core logic of malt distillation. Mountain spring water, controlled fermentation and Scottish-made copper stills establish a clean spirit, then Taiwan's heat drives unusually active maturation. The result is often intensely fruity and cask-led at younger chronological ages than a drinker might expect from cooler whisky regions.
Production
Production water comes from springs fed by Taiwan's Snow Mountain and Central Mountain ranges.
Malted barley is imported rather than grown in Taiwan; the distillery's regional production material notes imported malt and no in-house malting.
Temperature-controlled jacketed washbacks are used. Official regional material gives a fermentation period of 3-5 days; established specialist data records 16 closed stainless-steel washbacks and a typical 60-72 hour cycle in current operation.
Kavalan uses double distillation in Forsyths copper pot stills. The original configuration used paired 12,000-litre wash stills and 7,000-litre spirit stills; later expansion brought the site to 20 pot stills.
Whisky matures in multi-storey warehouses at Yilan, where strong temperature gradients accelerate extraction. The distillery uses American white oak extensively alongside European wine and sherry casks, with on-site cooperage and STR reconditioning for selected casks.
