Up to 100 hours in stainless-steel washbacks allows extensive fermentation-derived flavour development, while the River Teith supplies both process water and renewable power. Maturation in the old weaving sheds reinforces a production model that is closely tied to the converted mill site itself.

Deanston is one of the Highlands' most distinctive converted industrial sites: a former cotton mill turned distillery on the River Teith. Its long fermentations of up to 100 hours help create the waxy, fruity new make for which the distillery is known, while the same river supplies both water and hydro-electric energy. It is a particularly useful distillery for customers who want to understand how fermentation length can shape texture and flavour before oak maturation begins.
Production
