The Dalmore's robust, fruity new make is shaped by an intentionally asymmetric set of stills rather than a uniform stillhouse design. Boil balls, unusual wash-still vapour paths and water-jacketed spirit stills create different levels of copper contact and reflux, producing complementary spirit weights. That structurally complex new make is designed to withstand long and layered maturation across sherry, wine and other high-impact cask types.

The Dalmore's production story begins with unusually individual still geometry rather than a standardised set of identical pots. Different still shapes create distinct spirit personalities, with added reflux and copper contact refining the new make while retaining weight. That strong, fruity base is then deliberately built for sophisticated multi-cask maturation, which is why wood management is so central to The Dalmore's identity.
