Cardrona Distillery

Cardrona builds a clean, fruit-led new make through a long fermentation in stainless steel followed by small-scale double pot distillation. The compact Forsyths stills retain concentration while the extended fermentation encourages ester development before the spirit reaches oak. Maturation in an alpine, low-humidity environment with large seasonal temperature swings gives cask interaction a distinctive environmental context.

Cardrona is a modern New Zealand single malt distillery with unusually small bespoke pot stills and a fermentation of at least 70 hours. Its whisky starts with South Island barley and water drawn from Alvin's Well beneath Mount Cardrona, before ageing in casks such as ex-bourbon, ex-sherry and Otago Pinot Noir.
