Cardrona is a modern New Zealand single malt distillery with unusually small bespoke pot stills and a fermentation of at least 70 hours. Its whisky starts with South Island barley and water drawn from Alvin's Well beneath Mount Cardrona, before ageing in casks such as ex-bourbon, ex-sherry and Otago Pinot Noir. The combination of long fermentation, compact stills and a high-altitude maturation climate makes Cardrona particularly interesting for customers exploring how New World whisky can build character through both process and place.
Production
Water is drawn from Alvin's Well, fed by the flanks of Mount Cardrona; the distillery also describes its process water as pristine Cardrona mountain water.
Single malt production uses 100% malted barley grown on New Zealand's South Island/Canterbury plains, malted to Cardrona's specifications and milled on site.
Wort ferments in stainless-steel washbacks with distiller's yeast for a minimum of 70 hours.
Whisky is double-distilled in two bespoke, hand-hammered Forsyths copper pot stills: the 2,000-litre wash still 'Roaring Meg' and 1,300-litre spirit still 'Gentle Annie'.
Spirit is filled into seasoned ex-sherry, ex-Pinot Noir and ex-bourbon casks and matured in Cardrona's high-altitude valley environment, where the distillery highlights arid humidity and a large seasonal temperature swing.
