What makes the spirit taste as it does

Bimber builds much of its fruit character during an unusually long seven-day fermentation in open American-oak washbacks. Direct-fired small copper stills preserve weight while extensive copper contact keeps the spirit clean and ester-rich. That combination produces a dense but bright new make suited to active cask maturation without losing its tropical and orchard-fruit core.

Why we pour it

Bimber takes a deliberately hands-on approach to London whisky. Seven-day fermentation in open wooden washbacks generates intense ester-driven fruit, while small direct-fired pot stills give the spirit texture and weight. The result is a modern English single malt style that is rich, fruity and characterful before the cask begins to add its own influence.

How it is made

Water

Bimber states that its process water comes from the Thames basin and is naturally high in calcium; it is treated and filtered before use.

Malt

Bimber uses single-farm English barley that is traditionally floor malted at Warminster Maltings.

Fermentation

Fermentation runs for roughly seven days in open-topped wooden washbacks made from lightly toasted American white oak. Bimber uses in-house yeast strains and controls washback temperature around 26-28°C; the resulting wash is around 10% ABV.

Stills & distillation

Bimber distils in two small Portuguese copper pot stills, Doris and Astraeus, heated by direct fire. The stills were designed to maximise copper contact and are run slowly to preserve a full-bodied, fruit-forward spirit.

Peat

The core house style is unpeated; Bimber also produces separately identified peated spirit for limited releases.

Maturation

The distillery uses hand-selected casks and an on-site cooperage, with a broad programme of bourbon, virgin oak, wine and fortified-wine casks across releases.
