What makes the spirit taste as it does

Benromach creates complexity early through long fermentation and a mixed brewer's/distiller's yeast regime in larch washbacks. Double distillation through a small two-still setup preserves enough weight to carry the cereal and gentle peat character. First-fill bourbon and sherry wood then amplify fruit, malt, spice and smoke without masking the compact Speyside new make.

Why we pour it

Benromach deliberately looks back to an older Speyside style, where even elegant malt whisky carried a thread of smoke. Long fermentation, two yeast types and a compact two-still regime give the spirit weight and complexity before it enters first-fill bourbon and sherry casks. The result is a useful bridge between classic fruity Speyside whisky and a more savoury, gently smoky style.

How it is made

Water

Benromach uses soft water from the Chapelton Spring in the Romach Hills a few miles behind the distillery.

Malt

Scottish barley is malted to Benromach's specification with a light touch of peat smoke, recreating a subtly smoky Speyside style.

Fermentation

Fermentation lasts approximately three to five days in larch washbacks. Benromach uses both brewer's yeast and distiller's yeast to create a more complete fermentation and greater flavour complexity.

Stills & distillation

Benromach double distils through two bespoke copper pot stills and relies on manual control of the run and spirit cut.

Peat

The core house style uses lightly peated malt designed to give a delicate smoke rather than an overtly peaty profile.

Maturation

Benromach strongly favours first-fill casks seasoned with bourbon or sherry, and matures spirit in traditional dunnage-style warehouses.
