Limestone-influenced water and a relatively long fermentation provide a clean foundation for grain and yeast character before distillation. Maturation across a large rickhouse estate then drives the concentration of caramel, spice and oak associated with the distillery's bourbon profile.

Why we pour it

Barton 1792 is a large historic Bardstown distillery built around classic Kentucky bourbon engineering rather than pot-still whisky production. Its whiskey is column distilled, redistilled through a copper doubler and matured across a substantial estate of traditional barrel warehouses. That structure helps explain the firm grain, spice and oak character found across the 1792 family, even as individual mash bills vary.

Water

The distillery site includes the Tom Moore Spring; established specialist references describe the process water as Kentucky limestone-filtered spring water.

Malt

Bourbon production uses corn with rye and malted barley across its traditional mash bills; some 1792 releases substitute wheat for rye or increase the rye proportion for expression-specific recipes.

Fermentation

Established specialist references describe closed fermentation with a proprietary yeast strain and fermentation in the roughly 72–96 hour range.

Stills & distillation

Barton 1792 uses column distillation followed by a copper doubler for a second distillation step.

Maturation

Whiskey matures on site in traditional Kentucky rickhouses. The official distillery states that the Bardstown property contains 29 barrel-aging warehouses; bourbon is matured in new charred oak as required by law.
